Reflexions
The dynamic duo of Chef Thibault Chiumenti and
restaurant manager Thomas Deledell having been at Reflexions just over a
year has raised its profile to higher levels. Chef Thibault’s style is
modern Mediterranean French built on a classic base with a light modern
twist. Thomas provides well orchestrated service delivery and perfect
wine pairing.
To start a duo of ‘foie gras’, a slice perfectly
pan-fried with poached caramelized Asian pear and a slice of ‘terrine
with fig stuffed with shallots poached in red wine’, a perfect taste
combination paired with American Riesling. Then their signature dish
‘roasted snow fish with peppers “piperade” chorizo grimolata’, amazing
flavours paired with Sileni Merlot. A vanilla lime sherbet to cleanse
the palate arrived before ‘roast pigeon breast with foie gras filled
duchess potatoes’ paired with Chateau d’Aqueriq. To finish ‘chocolate
fondant with a hazelnut base’ as a pre dessert, then green apple jelly
and ice cream with Rigoletto, a delicious Italian dessert wine. This was
a perfectly balanced well thought out meal delivered with flawless
style.
